Egg Bites

Here's my receipe for Knock Off Starbucks Eggie Bites;
Comstomizations, Tips & Tricks at the bottom


INGREDITES:
12 Eggs --makes 1 egg per cup
Heaving Whipping Cream --1 splash; opment if dairy-free

TOOLS:
Bowl
Whisk
Cupcake Tin
Oil Spray
1/4c Mesasuring Cup
Small Spoon
Spatual
Cooling Rack

DIRECTIONS:
1. Preheat oven to 350F
2. Crack eggs into a large bowl; add a splash of whipping cream
3. Whisk eggs and cream until liquid is hormonius (all yoks broken, all whites mixed in)
4. Spray cupcake tin with oil spray
5. Take 1/4c mesasuring cup and scope egg mixture (go alittle less than measuring cup will hold) into each cupcake tin
6. Add any additions you want (I reccomend NO More than 3 items); use a small spoon to mix the additions with each egg
7. Place in oven and cook for about 15 minutes. Start checking on them at 13 minute mark. You'll know if they're done when there's no more liquid in the middle
8. Once cooked, take out of oven and them set for about 2 minutes. With a spatual carefully transfer to a cooling rack (They Will Be HOT)
9. Refregerate after cooled in an airtite contailer; eat within 3 to 4 days.


Tips & Tricks:

Make sure the eggs are completely hormoious. Break all the yoks first, then start to whisk. Every couple of seconds, scope the liquid with the wisk and pull it up:

If you see egg whites fall from the whisk, keep whisking
If you see yellow liquid drip from the whisk, you're done

You can costomize these egg bites with whatever you want, however, be mindful that you do not over fill the cupcake tin. I tried to leave about 1/8" edge from the liquid to the top...some worked, some didn't. They all puffed up but didn't spill over & out of the cupcake tin.

When making the combinations, cook ingredients and then transfer to a bowl to cool & mix before adding to egg bites.

Here's the combinations I used:

Jimmy Dean's Turkey Sausage: I used one package of frozen turkey saugage. It came with 6 links, which I cooked & chopped up
[Chopped Math: 1 sauage, cut in half, cut into 4ths; 4 pieces of sausage to an egg cup]
Onion: Half an onion, cook to slightly caramelized
Cheddar Cheese: This I complete eyeballed; I put some on top of each egg bite

Spinach: Used Frozen Spinach and cooked down so all the water is evaporated
Onion: Half an onion, cook to slightly caramelized
Cheese: Eyeballed; put some one top of each egg bite

I will be keeping these in my freezer at all times now. My recomendation is take the frozen egg bites out from the freezer and put in the refrigerator. From the refregerator, heat in microwave for about 30-45secs

I made one batch that "failed." The egg bites over cooked and wouldn't come out of the pan. Totally my fault, I didn't remove them from the cupcake pan in time. With those egg bites, I cut them in half and put them in a tortillas for a 'breakfast tacos.'
